
This is an incredible vaporised paella rice for catering.
The most important thing to note is that not all vaporised rices are the same. This is superior to any other we've found. The grain is a perfect size for paella, shorter than other vaporised rices and very similar to a standard paella rice. More importantly though is the resilience of the grain - it's virtually indestructible. It's almost impossible to overcook it and it won't break up or go soggy as you prepare your paellas. That means less wastage and a better, more consistent result.
This is the variety of rice most commonly used to make paella, but subjected to a special process which limits its capacity to absorb water. It can therefore be prepared and left for a number of days without over-absorbing water and turning into a soggy mess! Popular in restaurant environments where rice is precooked and kept in the fridge, but also useful if you like to make up a big batch of a rice dish and eat over a number of days.
