A useful product for adding depth of flavour to traditional Spanish dishes like caldos, soups, lentil dishes and cocidos.
This is basically the section of the ham leg just above the hoof and consists of bone, meat, fat and skin. It can be added whole to flavour your dishes or preferably can be cut up into smaller pieces with a good saw or strong serrated blade.
